Smoked pork loin
Components:
Pork meat fillet, wine, salt, coriander, black pepper, cumin.
Preparation:
We place the whole fillet in salt and wine with spices for fermentation for more than fifteen days. Then exposed to the smokers, to dry and mature.
It is incredibly delicious, in sandwiches or as meze with wine or ouzo and is ideal for low fat diets. Eat cold, fried or grilled in slices.
